Scrumptious chocolate chip cookies

As the weather grows colder and colder, it's time to whip out the baking tray and make some delicious cookies for the pre-Christmas season. Today, I tried a new recipe for delicious chocolate chip cookies, and they came out rather well (self-pat on shoulder). In case you're admiring the beautifully Christmassy and wintery table cloth that serves as the humble background for my cookies, I bought it at Butlers for about €30. 

But now to the recipe. 

Ingredients for 12-14 cookies:
100 g of softened butter
100 g brown sugar
1 beaten egg
100 g plain flour
1/2 teaspoon of baking powder
1 tablespoon of cocoa powder
50 g of milk chocolate
50 g of white chocolate 

Preheat the oven to 180°C and line a baking tray with baking paper. Blend the sugar and softened butter in a bowl.

​When a the mixture has a creamy texture, add the beaten egg and blend it in as well. When everything has mixed well, fold in the flour, baking powder, cocoa powder and chocolate drops.

 Spoon the mixture onto the baking paper, about as big as a big spoon. Ensure there is enough space between the cookies, as they will rise in the oven. Use the spoon to flatten the mixture and put the tray into the oven. 

Let your cookies bake for about 12-15 minutes. You should take them out when they get crispy around the edges. ​Also note that the cookies still bake a little after taking them out, so it's fine when the centre is still soft. They will also get harder first before becoming softer again, so it's best to either devour them immediately, or wait a little while and put them into a cookie jar. 

If you want to have the perfectly round cookie shape, use dessert rings, which you can find on Amazon and most interior shops with a baking section. 

​And, finally, enjoy with a glass of milk! Yummy!
